Ingredients:
- 250 gms of slow roasted Quinces (cook medium to small pieces of quince in a syrup of honey, lemon juice, sugar and water and when soft place on a lined oven tray to slow roast in 100 degrees C until firm, chewy and red in colour…… approx 2 hours)
- 250 gms butter
- 1 cup of plain flour
- 1 cup of SR Flour
- 250 gms of white chocolate
- 3 eggs
- 2 cups sugar
- grated rind of one small lemon
- 1 tspn vanilla
Method
- In a large saucepan melt butter and stir in sugar to make a light caramel (until sugar dissolves)
- Then take off heat and let cool slightly
- Add and stir in vanilla, grated lemon rind , chopped slow roasted quince (Note: or apricots, nuts, sultanas ….. this recipe suits anything), and white choc bits which melt into the mixture.
- Then stir in 3 eggs one at a time,
- Stir in flour and combine all ingredients well
- Line a roasting pan with paper and pour in mixture
- Cook in 175 degree C oven until golden brown, remove and cool in tin until cold. Cut into slices and serve or freeze.
Notes
This recipe adapts well to using gluten free flours. Include gluten free flour instead of standard flours for gluten free options
It is quite sweet and you can reduce the sugar as well but the chewiness will be affected, not so much the flavour which comes from the quince, lemon and vanilla .
