Step 1. Prepare the Vegetables

  • 2kg Zucchini, sliced very thin
  • 200 grams Red Onion, sliced very thin
  • 200 grams chilies, sliced very thin
  • 50 grams garlic cloves, sliced very thin

Mix veg well and place into clean sterilized container.

Step 2: Prepare the Pickling Mix

Ingredients

  • 500ml boiling water
  • 250ml Red Wine vinegar
  • 250ml White wine vinegar
  • 100 grams dark brown sugar
  • 100 grams light brown sugar
  • 2 bay leaves
  • 50 grams mixed mustard seeds
  • 10 grams cracked pepper
  • 40 grams fresh chopped herbs – basil, thyme, parsley
  • 20 grams salt

Mix liquids and herbs, spices in a pot, bring to boil, pour over vegetables.

Step 3: Seal and store in the refrigerator
