Step 1. Prepare the Vegetables

- 2kg Zucchini, sliced very thin
- 200 grams Red Onion, sliced very thin
- 200 grams chilies, sliced very thin
- 50 grams garlic cloves, sliced very thin
Mix veg well and place into clean sterilized container.
Step 2: Prepare the Pickling Mix
Ingredients
- 500ml boiling water
- 250ml Red Wine vinegar
- 250ml White wine vinegar
- 100 grams dark brown sugar
- 100 grams light brown sugar
- 2 bay leaves
- 50 grams mixed mustard seeds
- 10 grams cracked pepper
- 40 grams fresh chopped herbs – basil, thyme, parsley
- 20 grams salt
Mix liquids and herbs, spices in a pot, bring to boil, pour over vegetables.
